Fishcake Sunday....a Bermudian Good Friday Tradition
As promised this morning in class attached is the recipe of the Traditional Bermuda Codfish Cake. There are many recipes for Codfish Cakes and below is Jules's version of a simple way to prepare this Bermudian tradition. We have also added a video of us preparing the Cakes. ENJOY!!!!
Bermuda Fishcake Recipe

Ingredients
2 lbs Salted Codfish
5 lbs Potato’s (peeled and diced)
6 large eggs
4 cups Panko breadcrumbs
30 ounces Vegetable or Canola Oil
2 Tbs Madras Curry Powder
1 Tbs Cinnamon
1 Tbs Pepper
2 Tbs Italian Seasoning
Condiments
Raisin Bread rolls
Sliced Swiss cheese
Lettuce diced
1 red onion sliced
Avocado sliced
Tomato sliced
Mayonnaise
Tabasco sauce
Preparation:
Rinse salt off codfish and place in large bowl of water to soak in fridge minimum of 6 hours (or overnight).
Phase 1:
Drain codfish and place in large pot half filled with water. Peel and dice potatoes and add. Cook for 30 minutes until potatoes are tender. Strain water, return codfish and potatoes to pot and let cool to room temperature-about 30 minutes.
Add all spices above and mash & mix together by hand .
Place in fridge to cool down minimum 4 hours- preferably overnight.
Phase 2:
Place baking sheet on cookie tray, place in oven and preheat to 300 degrees Fahrenheit.
Add oil to frying pan and bring to boil- after boil turn temp to medium.
Add six eggs to codfish mixture and stir for about 3 min with wooden spoon.
Form fish cake patties with hands- same technique as making hamburger patties.
In mixing bowl have panko breadcrumbs ready for cakes to be dipped in & thoroughly coated .
Carefully lower patties into hot oil- (1-2 at a time ) let fry until golden brown -about 30 seconds.
Once fried place patties on cooking sheet in oven .
Repeat until all patties are fried.
Bake in oven at 300 degrees Fahrenheit for 20 minutes.
Phase 3:
Slice buns in half and lightly toast
Layer lettuce and onion on bottom bun and patty directly on top
Place Swiss cheese on Patty and layer tomato and avocado on top of cheese
Add mayonnaise and Tabasco on top bun and place on top .
Cut in half and ENJOY!!!!!

Editors remarks:
We have experimented with a homemade mango and tomato salsa with caramelised onion or mushroom, gherkin , caramelized onion salsa- which complimented the fish cakes very well. Or as a lighter version serve fishcakes with salad, salsa and homemade pita bread. (see last pic in this blog)
